Air fryer beef flautas

When the tacos are tightly rolled & fried until crispy, they are called flautas. Thanks to technology you can make this crispy antojito without frying in oil but with the air fryer instead. Enjoy the crunch!

Ingredients

  • 15 La Tortilleria corn tortillas
  • 1.5 kg beef brisket
  • ¼ onion
  • 4 garlic cloves
  • 1½ tbsp rock salt
  • 5 peppercorns

Garnish ingredients

  • 1 lt sour cream
  • 25 ml thickened cream
  • 1 pinch salt
  • 800 g tin tomatillos
  • 3 long green chillies
  • ½ bunch of coriander
  • 1 garlic clove
  • ½ avocado
  • ½ lime, juiced
  • ½ tbsp rock salt
  • ¼ thin sliced lettuce
  • ½ red onion, sliced
  • 0.1 kg ricotta salata cheese

Cooking Instructions

  1. Place the beef in a pot, with all the rest of the ingredients
  2.  Add water to the pot , the water needs to cover the meat (3 or 4 cm over the meat).
  3. Cook it in midium high temperature for 3 hrs.
  4. After the meat is already soft & well done, we need to shredded it. (Wait until it cools down a bit and you can handle the heat).
  5. Reheat the tortillas make it soft.
  6. Add a portion of meat & roll it.
  7. With a tooth stick hold them in pairs to keep it rolled.
  8. Air fry the flautas for 8 min in a 190 degrees.

Garnish 

  1. For the cream, mix the sour cream, thickened cream and a pinch of salt until well incorporated.
  2. For avo salsa, strain the tomatillos & rinse them with water. Blend the tomatillos with long green chillies, ¼ bunch of coriander, garlic clove, avocado, lime juice & ½ rock salt  with a little bit of water to help blend properly.
  3. Place the Flautas in a plate & add the avocado salsa, lettuce & crema on top. Place some red onion slices, spread on top the ricotta Salatta & add chopped Coriander.
